Canner testing promotes safety

Paula Gray, a nutrition educator with the Vernon County University of Missouri Extension Office, tests a pressure canner gauge for accuracy. Pressure canners are required when canning any food with low natural acid such as meats, fish and tomatoes. It is recommended that pressure canners be tested once a year. The extension office holds testing "drives" in July and August, during which residents can bring canner lids in at any time during that day to be tested; an appointment is required on other days. The fee for testing a dial-gauge pressure canner is $1. To make an appointment call the extension office at (417) 448 2560.
